Barley-enriched balady bread for a climate-resilient Egypt

This solution track explores the integration of locally produced barley into Egypt’s subsidised balady bread system as a strategy to reduce wheat-import dependence, strengthen food-system resilience and develop new markets for domestic barley producers. The innovation combines a wheat-barley bread formulation with domestic barley seed multiplication and production, validated milling and baking procedures, supply-chain adaptation and institutional and policy arrangements. Initial testing of 10%, 20% and 30% barley substitution involved 51,360 loaves and 642 households, with the 10% blend performing best in sensory testing. Focusing initially on Matrouh and New Valley Governorates, the track aims by 2030 to support adoption of bread containing 10–20% barley, reach up to 800,000 citizens and engage 1,000 farmers in domestic barley production.
